Spring Recipes to Cook in Your Sequoia Kitchen: Part III

Summer is just around the corner and your beach body is in progress! One of our residents has the perfect recipe to satisfy your sweet craving and your desire to remain healthy. Created and consumed in her Sequoia kitchen, we're drooling over this delectable dessert. Check it out!

Chocolate Avocado Mousse

Prep Time: 10 minutes

Cook Time: 15 minutes

Serves: 4

What You'll Need:

  • 2 ripe hass avocados
  • 1/2 frozen banana
  • 1/2 cup cocoa powder
  • 1/4 cup cacao powder
  • 1/4 cup cashew milk
  • 1/2 cup peanut butter
  • 1/4 cup cashew butter
  • 1/2 cup coconut sugar

Topping:

  • 1/4 cup raspberries
  • 1/4 cup chopped chocolate
  • 2 tbsp chopped pistachios

Directions:

  1. In a food processor, add all the ingredients (except topping ingredients).
  2. Blend on 'high' for sixty seconds, or until you achieve a creamy texture.
  3. Pour the mixture into four small cups, cover with plastic wrap, and chill for four hours.
  4. Top with chopped chocolate, raspberries, and pistachios. Serve immediately.
  5. Enjoy!
